Spinach Mock Ravioli

This is one of my husbands favorite meals. It comes from the Taste of Home Ground Beef Cookbook and has been modified with more cheese to suit our families preference. We hope you like it too!


Spinach Mock Ravioli

1 pound ground beef
1 medium onion, chopped
1 garlic clove, minced
1 jar (28 0z.) spaghetti sauce
1 tsp. salt
2 cups medium pasta shells, cooked and drained
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
¾ c. shredded cheddar
¾ c. shredded parmesan cheese
2 eggs, beaten
½ c. olive oil

Preheat oven to 350 degrees. In a skillet, cook beef, onion, and garlic over medium heat until the meat is no longer pink; drain. Stir in spaghetti sauce and salt; set aside. In a bowl, combine the pasta, spinach, cheeses, eggs, and oil. Transfer to a greased 13x9x2in. baking dish. Top with the meat sauce. Bake uncovered for 30 minutes or until heated through. Yield: 6-8 servings.

To drain the spinach I usually squeeze it through my hands. If it is frozen, you can place it in a colander and put it under warm running water to speed things along.
