I came upon this delicious recipe on, you guessed it, Pinterest and had to try it out. I modified mine a little because I couldn't find all the fancy ingredients. Here's the original.
So here's what I did...
Bought 1 lb. of cheese filled ravioli and cooked it only half the time, about 3 1/2 minutes. Then I drained it and sprayed the little guys generously with Pam non-stick spray.
In one bowl I whisked 3 egg whites. In a second bowl I combined: 1/2 cup white flour, 3 cups Italian fine bread crumbs, and 1/2 cup shredded Parmesan cheese.
It was a messy process, but I wore gloves. I'm such a pansy!! You dunk each ravioli into the egg whites, then cover them with the bread crumb mixture. Place them on a baking sheet lined with aluminum foil and topped with backing racks sprayed down with Pam. Just don't spray your phone like I did... it's a bit messy!!
I loaded them up with a little more Parmesan cheese before baking them at 450 for about 8-9 minutes until golden brown. I heated up some marinara for dipping and it was a hit!! Delicious!
This makes a fun appetizer or finger food. We also had Pecan crusted chicken, which wasn't as good as it sounded, and roasted asparagus. I'll show you how to whip up that bit of yum another time! Enjoy!
