Best Ever Banana Bread...

at least that's what Pinterest said! I think it is right!! I did add a secret ingredient to put it over the edge. Shhhh!! I'm willing to share it with you. :)

Butterscotch Pecan Banana Bread


2 eggs, beaten
1 tablespoon vinegar + just less than 1 cup milk
1/2 cup vegetable oil ( I use olive oil)
1 cup mashed bananas
1-1/2 cups white sugar
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecans
1 cup butterscotch chips

1. Preheat oven to 325 degrees. Spray a 9x5 loaf pan with nonstick cooking spray.

2. Measure 1 tablespoon vinegar and place into a 1 cup measuring cup. Fill the measuring cup up the rest of the way with white milk. Set a timer for 5 minutes. This will result in 1 cup of buttermilk! :)

3. Mash the bananas and place in a mixing bowl. Add eggs, oil, and buttermilk and mix well.

4. In a separate bowl sift together: sugar, flour, baking soda, and salt.

5. Incorporate dry ingredients into the wet, using your mixer on slow speed.

6. Add pecans and butterscotch chips and fold in with a spoon.

7. Pour batter into loaf pan and bake for 1 hour and 20 minutes. I check it at this point and almost always need to bake for another 5 minutes to get the center cooked!
