Super Mac and Cheese

I came home from school yesterday to this wonderful meal. It is the perfect comfort food and we absolutely love it. You could hear me saying yum yum yum after my first bites. To top it all off Justin served me a double...

 scoop of ice cream, because 1st days are hard!!

Side note - I don't actually think that I like blue cheese, but in this it adds the perfect bit of barely there tang that sends the whole thing over the top. Well, that and the bacon! Oh and onions cooked in bacon grease... okay I want to eat more just thinking about it!!

(Corn optional)

Ingredients:

4 strips of bacon
1 large sweet onion, thinly sliced
6oz. elbow macaroni
2 cups shredded mozzarella cheese
1/2 cup blue cheese
1 cup half and half
1/2 tsp. ground black pepper

1. Preheat oven to 350 degrees. In a large skillet, cook the bacon over medium heat until crisp. Transfer the bacon to a plate. In the bacon drippings, cook the onions until caramelized. In a large mixing bowl, crumble the bacon and add the cooked onions.

2. Cook elbow macaroni according to package directions. Drain and add to the mixing bowl. Add the remaining ingredients, reserving 1/2 cup mozzarella cheese for later. Stir to combine.

3. Place the mixture in a greased 1 1/2 quart baking dish. Sprinkle with the remaining mozzarella cheese. Bake uncovered for 20-25 minutes or until the cheese is golden and bubbly. 

4. Try hard not to stuff yourself because it is so ridiculously good!!
